And finally, the vegan vanilla cake I made for my niece’s birthday party yesterday.



Sunday is my niece’s seventh birthday. And according to tradition I’m baking the cake. Its my gift for everyone in my family that I make them the sweet side of their day. The little miss wanted a princess cake. Unfortunately I’m not a fan of my mom’s idea of baking a bundt and shoving a Barbie in the middle. So I convinced C that she wanted a castle cake. I doubled the vanilla cupcake recipe from Vegan Cupcakes Take Over the World and baked it in a half sheet pan. The frosting is the fluffy buttercream from the same book. The frosting is my go-to for anything cake related. 

I know I could have thrown myself into this project and really wowed. But in the scheme of things a bunch of seven year old girls don’t care if I spent 3 hours or 3 days. Its sugary and pink and honestly isn’t that what matters at that age?
